Salties Lemon Sole has delicate and sweet white flesh, but unlike the name, it does not taste like a lemon. It is considered to be among the tastier fish species and it's often sought after by restaurants. It has a classic tender fine flake that comes apart easily when cooked. Lemon sole is a complicated fish, first it is not a sole, it’s a Flounder, and second, it is completely different than the Pacific Lemon Sole.

Lemon Sole is caught mainly off the Southwestern coast with some smaller areas on the southern and northwestern coasts.
Lemon Sole has an unusually small mouth for its size and as a matter of fact, the latin name “Microstomus” derives from the greek words “Mikro” meaning small and “Stoma” meaning mouth. Lemon Sole is not a true Sole, it's a flounder species of the right eye Flounder family. It is considered more flavourful than its pacific relative, and is highly sought after as a restaurant dish.
Common size of Lemon Sole is between 35 and 45 cm and 6 lbs. Some individuals can grow upwards of 65 cm, and live for 24 years.
Lemon Sole likes eating capelin, shellfish, worms, small bottom dwelling fish, sand eels, and seaweed.
