Saithe is related to Cod. It has a slightly darker flesh, but when cooked it is considered by many to be superior in flavour. Saithe has a slightly sweet taste, with medium firm flakes that hold well when cooked. Saithe is becoming more and more popular in European restaurants, especially in Britain.
