(2) Sliced Cold Smoked Steelhead Trout filets comes individually vacuum packed. The filets are cut to a D-Trim spec.
The filets are sliced across the width of the side, resulting in D shaped slices. Skin is off.
The weight of each filet is around 700 gr.

Freshness is everything. One of our guiding principles here at Salties is that quality always comes first, and that means the very best and freshest ingredients. Our smoked Steelhead Trout is a prime example of that.

The fresh Trout arrives to our smokehouse the day after being harvested in the neighbouring fjord. Every fish is cleaned, filleted, and trimmed by hand before it is dry salted and cured.Smoking with pure Icelandic Birch logs gives our Smoked Trout its robust smokey taste and silky smooth texture that slices perfectly.

Over 20% of the fillet weight is lost during curing and smoking. The focus on eliminating moisture is crucial to creating the deep, rounded flavours our customers know us for.

Icelanders take their fish very seriously, and Steelhead Trout is no exception. We can argue endlessly about what is the best material to use to burn to create the smoke, and what kind of salt is the best for the drying process; but we do not argue about the importance of using only the freshest fish available. The most common wood to burn to create the smooth medium-mild smokey taste is the Icelandic Birch.
